Elizabeth Valencia-Granillo

I am Elizabeth Valencia-Granillo, a Registered Dietitian from the Bay Area. I was born in California, but spent my childhood living in Mexico. This experience allowed me to be fluent in Spanish and be in touch with my Mexican culture.

I was fortunate to attend a diverse campus at San Jose State University. In the Dietetics major there wasn’t many Latinx students, but I was able to interact and learn from peers with different backgrounds. One area in which I want to see improvement is in removing the unhealthy label of “cultural foods”. Personally, I am familiar with Mexican cuisine and I find ways of tweaking recipes to make them healthier. Often times clients fear changing their eating habits because they think “cultural foods” are going to be removed from their diets, but it doesn’t have to be that way! I am excited to see more diversity in the Dietetics field and I hope to contribute to the change.
