Drop your 2 lb. chuck roast in the slow cooker and add a can of chipotle peppers in adobo sauce(it will be spicy) you can use only a couple peppers if you want. Add 1 tbsp avocado oil, lime juice, salt, pepper, garlic powder, cumin, paprika, and chilli powder. Set it on low for 8 hours or on high for 4 hours.
During the last 30 min prep your cilantro rice, black beans, and veggies! Use the leftovers for taco night or quesdillas.
