A very satisfying Japanese-style vegetarian supper/lunch in under 30 mins. The main course is mini Bella mushrooms. Brown mushrooms tend to be more intense in flavor, which is perfect for roasted or sautéed.
2 tbsp Miso paste
3 tbsp Mirin
2 tbsp soy sauce
2 cloves crushed garlic
1 tbsp sesame oil
Green onion chopped in an angle
Toasted sesame seeds
1. Simply whisk miso paste with seasoning ingredients, coat the mushroom evenly, wrap in tin foil and bake them in an oven for 25 minutes.
2. Top the stir-fry udon with mushrooms, and pour over the remaining sauce over the udon from tin foil. Garnish with sesame and green onion.
