Miso Mushroom Udon

A very satisfying Japanese-style vegetarian supper/lunch in under 30 mins. The main course is mini Bella mushrooms. ⁣ Brown mushrooms tend to be more intense in flavor, which is perfect for roasted or sautéed. ⁣

2 tbsp Miso paste ⁣
3 tbsp Mirin ⁣
2 tbsp soy sauce ⁣
2 cloves crushed garlic ⁣
1 tbsp sesame oil ⁣
Green onion chopped in an angle ⁣
Toasted sesame seeds ⁣

1. Simply whisk miso paste with seasoning ingredients, coat the mushroom evenly, wrap in tin foil and bake them in an oven for 25 minutes. ⁣
2. Top the stir-fry udon with mushrooms, and pour over the remaining sauce over the udon from tin foil. Garnish with sesame and green onion.
